  • 2 medium zucchinis, diced
  • 1 large sweet potato, peeled and cubed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika

  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

  4. Add diced zucchini and cook uncovered for an additional 5 minutes until softened but still slightly crunchy.
