  • 2 tablespoons olive oil
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin

  • 1/2 cup red lentils
  • 2 cups vegetable broth
  • 2 1/2 cups unsweetened almond milk (divided)

Instructions

  1. Preheat your oven to 425ºF.
  2. In a large mixing bowl, combine chopped cauliflower, shallots, and garlic. Drizzle with olive oil, turmeric, cumin, and salt; toss well.
  3. Spread the mixture on a baking sheet and roast for about 30 minutes, flipping halfway through.
  4. Transfer roasted vegetables to a saucepan; add red lentils, vegetable broth, and 2 cups almond milk. Stir to combine.
  5. Bring to a gentle boil over medium heat; cover and simmer for about 20 minutes until lentils are tender.
  6. Blend the soup until smooth using an immersion blender or regular blender (in batches if needed). Adjust consistency with remaining almond milk.
