  • 1/4 cup vegetable oil
  • 1 egg

  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, maple syrup (or honey), Greek yogurt, vegetable oil, egg, and vanilla essence until smooth.
  3. In another bowl, combine whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Gradually stir dry ingredients into wet mixture until just combined.
  5. Pour batter into a greased muffin tin, filling each cup about two-thirds full.
  6. Bake for about 18 minutes or until a toothpick comes out clean.
