  • 1 1/4 cup blanched almond flour (or tigernut flour)
  • 3 Tbsp coconut sugar
  • 1 Tbsp ground flax
  • 1/8 tsp salt
  • 3 Tbsp melted coconut oil
  • 1 Tbsp water
  • 1 tsp vanilla extract
  • 2 Tbsp dark chocolate
  • 3 Tbsp peanut butter (or Sunbutter)
  • 1 cup dark chocolate (5oz)
  • 1/2 Tbsp coconut oil

Instructions

  1. Prepare a baking sheet by lining it with parchment paper.
  2. In a mixing bowl, combine almond flour, coconut sugar, ground flaxseed, and salt. Mix well.
  3. Add melted coconut oil, water, and vanilla extract to the dry ingredients; stir until combined.
  4. Press the mixture evenly into the prepared baking sheet.
  5. Melt dark chocolate in a saucepan or microwave; stir in peanut butter until smooth.
  6. Spread the chocolate filling over the base layer.
  7. Chill in the refrigerator for about 15 minutes until set.
  8. Melt additional dark chocolate with coconut oil; dip each bar into this mixture.
  9. Place back on parchment paper and chill again until firm.
