  • 1/2 cup refried beans
  • 3/4 cup Greek yogurt
  • 10 oz. can red enchilada sauce
  • 8 flour tortillas (8-inch)
  • 1.5 cups shredded Mexican cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a 9×13-inch baking dish with nonstick spray.
  2. In a mixing bowl, combine Greek yogurt, refried beans, and taco seasoning. Add shredded chicken and half a cup of cheese; mix well.
  3. Place tortillas on a flat surface, fill each with about 1/3 cup of the mixture, roll tightly, and place seam-side down in the baking dish.
