  • 1/4 tsp red pepper flakes
  • 2 tbsp tomato paste
  • 1 cup carrots
  • 5 cups chicken broth
  • 1.5 lbs red or yellow potatoes
  • 2 cups spinach
  • 1/2 cup heavy cream

  2. Stir in Italian seasoning, paprika, red pepper flakes, and tomato paste; cook for 1 minute.
  3. Pour in chicken broth while scraping the pot to dissolve tomato paste; bring to boil.
  4. Add cubed potatoes and diced carrots; reduce heat to medium-low and simmer uncovered for 15–25 minutes until potatoes are fork-tender.
  5. Stir in fresh spinach; cook for another 2–3 minutes until wilted.
  6. Lower heat and gently stir in heavy cream; season with salt and additional red pepper flakes if desired.
