  • 3 tablespoons brown sugar
  • 1 tablespoon honey
  • 2 tablespoons gochujang
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 4 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • 3 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 medium carrot, julienned
  • 2 tablespoons mayonnaise
  • 1 teaspoon sugar
  • Salt and black pepper to taste
  • 4 brioche or potato sandwich buns
  • Butter for toasting buns

Instructions

  1. In a mixing bowl, whisk together soy sauce, brown sugar, honey, gochujang, rice vinegar, sesame oil, minced garlic, and grated ginger. Add chicken thighs to the marinade and let sit for at least 15 minutes.
  2. While marinating, prepare the slaw by mixing cabbages, julienned carrot, mayonnaise, rice vinegar, sugar, salt, and pepper in another bowl.
  3. Heat a grill pan over medium-high heat. Cook the marinated chicken for about 5-7 minutes per side until fully cooked.
  4. Toast the buns in butter until golden brown. Assemble sandwiches with grilled chicken and a generous scoop of cabbage slaw.
