Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
  3. In a large bowl, cream softened butter and granulated sugar until light and fluffy. Add egg, vanilla extract, and lemon zest; mix until fully combined.
  4. Gradually add the dry ingredients to the wet mixture until just combined. Roll out dough to about 1/4 inch thick and cut out cookies using a round cookie cutter.
