  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • Juice and zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves
  • Salt and pepper to taste

Instructions

  1. Pound the chicken breasts to an even thickness and season with salt and pepper.
  2. In a large sauté pan, heat olive oil over medium-high heat. Cook the chicken for 3-4 minutes per side until golden brown. Remove from pan.
  3. Sauté minced garlic in the same pan for 1 minute. Add chicken broth, lemon juice, and zest; bring to a boil. Lower heat, stir in heavy cream, simmer for about 5 minutes until thickened, then add Parmesan cheese.
  4. Stir in fresh spinach until wilted, return chicken to the pan, spoon sauce over it, cover, and cook for another 2 minutes.
  5. Garnish with lemon slices and extra Parmesan before serving.
