  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 1/2 cup milk
  • 3 large egg yolks
  • 1/4 teaspoon vanilla extract
  • Fresh raspberries for garnishing

Instructions

  1. Preheat oven to 400°F (200°C). In a saucepan, combine water, butter, and salt over medium heat until boiling. Remove from heat and stir in flour until smooth.
  2. Allow dough to cool slightly. Mix in eggs one at a time until fully incorporated.
  3. Transfer dough to a piping bag and pipe eclair shapes onto a parchment-lined baking sheet. Bake for 25–30 minutes until golden brown. Cool on a wire rack.
  4. In another bowl, whisk milk, egg yolks, sugar, cornstarch, lemon juice, and zest. Cook over medium heat until thickened. Let cool before folding in whipped cream.
  5. Slice cooled eclairs open and fill with the lemon cream mixture using the piping bag.
  6. Garnish with fresh raspberries drizzled with a mixture of powdered sugar and lemon juice before serving.
