  • 34 medium sweet potatoes
  • 1 can chickpeas
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp paprika
  • ½ cup hummus
  • ½ small red onion
  • ⅓ cup chopped parsley
  • ⅓ cup vegan feta cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and halve the sweet potatoes lengthwise, scoring each half.
  2. Toss the sweet potato halves with olive oil and salt, placing them skin-side up on a baking sheet. Roast for 25-30 minutes until caramelized.
  3. While the sweet potatoes roast, coat chickpeas with olive oil, paprika, and salt, spreading them on another baking sheet. Roast for 20-25 minutes until crispy.
  4. Once finished, assemble by adding hummus on top of the sweet potatoes, followed by roasted chickpeas, sliced red onion, parsley, and vegan feta if desired.
