  • 1/2 cup evaporated milk
  • 8 tablespoons unsalted butter (4 cubed for cooking, 4 for adding later)
  • 1/4 cup boiling water
  • 1 1/2 cups toasted pecans
  • 1 cup granulated sugar

Instructions

  1. Line a baking sheet with aluminum foil and spray with nonstick cooking spray.
  2. In a medium saucepan over medium heat, combine white sugar, brown sugar, and evaporated milk. Stir until dissolved.
  3. Insert a candy thermometer and cook while stirring until the mixture reaches 240°F.
  4. Remove from heat and add cubes of butter on top without stirring; let sit for 1 minute before mixing in vanilla extract and pecans.
  5. Stir until thickened and lightened in color; quickly drop spoonfuls onto the prepared baking sheet.
  6. Allow pralines to set at room temperature for about 30 minutes.
