  • 3 cups frozen cauliflower rice
  • 1 (10 oz) can diced tomatoes
  • 1 oz packet taco seasoning
  • 8 oz shredded Mexican cheese blend
  • Grape tomatoes
  • Black olives
  • Avocado
  • Lettuce
  • Sour cream
  • Cilantro
  • Hot sauce

Instructions

  1. 1. Cook the chicken using your preferred method (poaching is recommended). Chop once cooked and set aside.
