- 3 cups frozen cauliflower rice
- 1 (10 oz) can diced tomatoes
- 1 oz packet taco seasoning
- 8 oz shredded Mexican cheese blend
- Grape tomatoes
- Black olives
- Avocado
- Lettuce
- Sour cream
- Cilantro
- Hot sauce
- 1. Cook the chicken using your preferred method (poaching is recommended). Chop once cooked and set aside.
