Low Carb Philly Cheesesteak Casserole is a delicious and satisfying dish that captures the classic flavors of a traditional Philly cheesesteak without the carbs. This hearty casserole features tender ground beef, colorful bell peppers, and a creamy blend of cheeses, making it an ideal option for weeknight dinners or meal prep.

  • 2 lbs ground beef
  • 1 large onion, diced
  • 2 large bell peppers (mixed colors), diced
  • 2 cloves garlic, minced
  • 8 oz cream cheese
  • 2 tbsp vinegar (as a substitute for Worcestershire sauce)
  • Salt and pepper to taste
  • 8 oz provolone cheese, sliced
  • 1½ cups mozzarella cheese, shredded
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a 9×13 baking dish with non-stick spray.
  2. Heat olive oil in a large skillet over medium heat. Sauté onions and bell peppers for about 5-6 minutes until softened. Add minced garlic and cook for another 30 seconds.
  3. Add ground beef to the skillet, season with salt and pepper, and cook until browned (7-8 minutes). Stir in vinegar.
  4. Reduce heat to low and mix in softened cream cheese until melted and well combined.
  5. Transfer the mixture to the prepared baking dish and spread evenly. Layer provolone cheese on top followed by shredded mozzarella.
  6. Bake for about 20-25 minutes or until cheese is melted and slightly golden.
  7. Let it rest for 5 minutes before serving.
