Instructions

  1. Prepare the Raspberry Swirl: In a saucepan, cook raspberries, sugar, and lemon juice over medium heat for 5-7 minutes until thickened. Strain to remove seeds and set aside.
  2. Preheat your oven to 325°F (160°C).
  3. Make the Crust: Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press into a springform pan and bake for 8-10 minutes until golden. Cool.
  4. Prepare Cheesecake Filling: Beat cream cheese until smooth. Gradually add sugar, then mix in sour cream, lemon zest, lemon juice, and vanilla extract. Add eggs one at a time on low speed.
