  • 1 ripe avocado, peeled and diced

Instructions

  1. Prepare the mango by peeling and dicing it into small pieces.
  2. Peel the cucumber, slice it in half lengthwise to remove seeds, then dice it.
  3. Rinse the blueberries under cold water.
  4. Cut the avocado in half, remove the pit, scoop out the flesh with a spoon, and dice it.
  5. In a large mixing bowl, combine the diced mango, cucumber, blueberries, and avocado.
  6. In a small bowl, whisk together olive oil, lime juice, honey, salt, and black pepper until well combined.
  7. Pour the dressing over the salad ingredients and toss gently to coat without mashing the avocado.
