  • 1 tablespoon vanilla extract
  • 1 ⅓ cups milk
  • 2 ⅓ cups mochiko flour
  • 1 ¼ teaspoons fine sea salt
  • For the ganache: 6 ounces white chocolate chips, ¼ cup heavy cream, 1 tablespoon culinary matcha powder

  1. Preheat oven to 350°F (175°C) and prepare a greased or parchment-lined baking pan (9×9 inches).
  2. In a mixing bowl, combine melted butter and sugar until smooth. Add eggs one at a time, mixing well. Stir in sifted matcha powder and vanilla extract.
  3. In another bowl, whisk together mochiko flour, salt, and any remaining matcha powder. Gradually add this dry mixture to the wet ingredients along with milk until just combined.
  4. Pour batter into the prepared pan and bake for about 50 minutes or until a toothpick comes out clean.
  5. While cooling, prepare the ganache by heating heavy cream until simmering, then stir in white chocolate chips and matcha until smooth.
  6. Once cooled, cut brownies into squares and drizzle with ganache before serving.
