  • 1 lb lamb shoulder or stew meat, cut into chunks
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 3 large carrots, peeled and chopped
  • 2 small zucchinis, sliced into half-moons
  • 1/2 cup prunes, chopped

Instructions

  1. Heat olive oil in a heavy-bottomed pot over medium heat.
  2. Sear lamb chunks until browned on all sides (about 5-7 minutes), then set aside.
  3. In the same pot, sauté onions until translucent (about 3-4 minutes). Add garlic and ginger; cook until fragrant (about 1 minute).
  4. Stir in spices: turmeric, cinnamon, cumin, smoked paprika, salt, and black pepper.
  5. Return the lamb to the pot; add chickpeas, carrots, zucchinis, and prunes. Mix gently.
  6. Cover the pot and reduce heat to low. Simmer for about 1.5 to 2 hours until lamb is tender.
