  • 150 g vegan cookies
  • 50 g vegan butter (margarine or coconut oil)
  • 2 kiwis (about 140 g or other fruits)
  • 200 g plant-based whipping cream
  • 400 g soy quark (or another quark alternative)
  • 50 g sugar
  • Zest of organic lemon
  • 1 tsp vanilla extract
  • 1.5 tsp agar-agar
  • Topping: additional kiwi slices, berries, and optional food color

Instructions

  1. Prepare the crust by crushing the vegan cookies in a food processor and mixing with melted vegan butter. Press firmly into a springform pan.
  2. For the filling, combine soy quark, plant-based cream, sugar, lemon zest, and vanilla in a mixing bowl. Heat water and dissolve agar-agar before whisking it into the mixture.
  3. Pour the filling over the crust and refrigerate for at least 4 hours until set.
  4. For the topping, heat water with sugar and agar-agar, then pour it over sliced kiwis arranged on top of the cheesecake.
