  • 4 chicken breasts (about 600g)
  • 2 tbsp olive oil
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 200g mushrooms, sliced
  • 2 garlic cloves, minced
  • 1 tbsp flour
  • 250ml chicken stock
  • 800g potatoes, peeled and cubed
  • 50g butter
  • 100ml milk
  • Salt & pepper, to taste
  • 1 tsp dried thyme

Instructions

  1. Prepare the mashed potatoes: Boil cubed potatoes in salted water until tender. Drain and mash with butter and milk. Season with salt and pepper to taste.
  2. Cook the chicken: Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the chicken until golden brown on both sides and cooked through. Remove from the skillet.
  3. Make the gravy: In the same skillet, sauté onion, bell peppers, and mushrooms until softened. Add minced garlic; cook briefly. Sprinkle in flour and stir well. Gradually add chicken stock while stirring continuously until thickened. Add dried thyme and return chicken to the pan.
  4. Serve: Plate the pan-seared chicken alongside creamy mashed potatoes and drizzle generously with gravy.
