  • 4 to 4 1/2 lbs ripe peaches (about 1418 medium)
  • ½ cup water
  • 4 cups granulated sugar

Instructions

  1. Rinse peaches under cool water and blanch in boiling water for 30-60 seconds. Transfer to cold water to cool.
  2. Peel peaches, remove pits, and cut into smaller pieces.
  3. In a large saucepan, combine peach pieces with water and simmer over medium heat until soft.
  4. Blend the mixture until smooth using a food processor or immersion blender.
  5. Return peach pulp to the saucepan, adding sugar. Stir until dissolved.
  6. Bring to a soft boil, then reduce heat and simmer until thick enough to mound on a spoon.
  7. Pour hot peach butter into sterilized jars, leaving about ¼” headspace if canning.
  8. If canning, process jars in a water bath for 10 minutes.
