  • 1 medium onion, freshly grated
  • 4 medium potatoes, grated and drained well
  • 3 fresh eggs
  • 4 tablespoons all-purpose flour
  • Sea salt to taste
  • Freshly ground black pepper
  • 6 ripe tomatoes, diced
  • 150g fresh mozzarella cheese, shredded
  • Fresh dill, chopped
  • Olive oil for pan-frying

Instructions

  1. In a large mixing bowl, grate the onion and potatoes. Add eggs, flour, salt, and pepper; mix to combine.
  2. Heat olive oil in a non-stick frying pan over medium heat. Drop spoonfuls of the potato mixture to form pancakes.
  3. Cook for about 2 minutes on each side until golden brown; transfer to paper towels to drain excess oil.
  4. Preheat oven to 200°C (400°F). In a bowl, mix diced tomatoes with half of the mozzarella and chopped dill.
  5. Place the tomato-cheese mixture on top of each pancake and sprinkle remaining mozzarella over the top.
  6. Bake in the preheated oven for 15 minutes until the cheese is melted.
  7. Serve warm with extra dill if desired.
