  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups chicken stock
  • 1/2 onion, diced
  • 8 oz sharp cheddar cheese
  • 1 Boursin garlic chive cheese round
  • 4 oz white cheddar cheese
  • 3 russet potatoes, chopped
  • Salt and pepper to taste

Instructions

  1. In a large soup pot over medium-high heat, melt the butter. Stir in the flour and continue stirring for about 3-5 minutes until lightly golden.
  2. Add the diced onion while gradually pouring in the chicken stock until well combined.
  3. Slowly incorporate the shredded sharp cheddar and Boursin cheese until melted.
  4. Gradually add half of the beef broth, stirring until thickened. Season with salt and pepper.
  5. Stir in the chopped potatoes and simmer for 10-15 minutes until tender.
  6. Blend half of the mixture using an immersion blender or regular blender, then return to the pot to mix well.
  7. Serve hot with toppings of your choice.
