  • 4 Mini Pumpkins (or ramekins)
  • 2 cups Heavy Cream
  • 1/3 cup Granulated Sugar (plus extra for topping)
  • 4 large Egg Yolks
  • 1 tsp Vanilla Extract
  • 1 cup Pumpkin Puree
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Salt

Instructions

  1. Preheat your oven to 325°F (163°C). If using mini pumpkins, cut off the tops and scoop out the seeds. Place them or ramekins into a baking dish.
  2. In a mixing bowl, whisk together heavy cream, granulated sugar, egg yolks, vanilla extract, pumpkin puree, ground cinnamon, ground ginger, and salt until smooth.
  3. Pour the custard mixture evenly into the prepared containers.
  4. Fill the baking dish with hot water halfway up the sides of your containers and bake for about 30 minutes until set but still slightly jiggly.
  5. Allow cooling at room temperature then refrigerate for at least two hours before serving. Just before serving, sprinkle sugar on top and use a kitchen torch to caramelize.
