  • 1 cup mascarpone cheese
  • ¼ cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup packed light brown sugar
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon nutmeg
  • Pinch cloves
  • Pinch coarse kosher salt
  • 1 (15 ounce) can pumpkin puree

  2. In a mixing bowl, blend mascarpone cheese, granulated sugar, and half the eggs until smooth. Add remaining eggs, vanilla extract, light brown sugar, and spices; mix until well combined.

  4. Pour the filling into the prepared crust and bake for about 1 hour and 15 minutes until set with a slightly jiggly center.
