  • 200 grams all-purpose flour
  • 2 teaspoons baking powder

Instructions

  1. Preheat your oven to 175°C (350°F). Grease and flour a small springform pan (20-22 cm).
  2. In a mixing bowl, whisk the eggs with sugar until frothy. Stir in the coconut oil, pumpkin puree, and vanilla extract until combined.
  3. In another bowl, mix together flour, baking powder, and pumpkin spice. Gradually fold the dry ingredients into the wet mixture until just combined.
  4. Pour the batter into the prepared pan and bake for about 25 minutes. Cover loosely with foil and bake for another 20 minutes or until a toothpick comes out clean.
  5. Allow to cool before glazing with a mixture of powdered sugar, milk, and maple syrup.
