  • 4 ounces cream cheese
  • 1¾ cup almond flour
  • ¼ cup coconut flour
  • ⅓ cup sugar substitute (1:1 ratio)
  • ½ cup sugar-free raspberry preserves
  • 2 eggs
  • 2½ cups unsweetened flaked coconut

Instructions

  1. Preheat your oven to 375°F (190°C). Line an 8 x 8-inch baking pan with parchment paper.
  2. In a mixing bowl, combine almond flour, coconut flour, butter, cream cheese, and sugar substitute. Mix until crumbly. Add one egg and mix until incorporated.
  3. Press the mixture firmly into the baking pan and bake for 15-20 minutes until golden brown.
  4. In another bowl, whisk together two eggs, sugar substitutes, and almond extract. Stir in flaked coconut until well combined.
  5. Spread raspberry preserves over the baked crust layer. Pour the egg-coconut mixture on top and smooth it out.
  6. Bake for an additional 20-25 minutes until the top is golden brown. Allow to cool completely before cutting into squares.
