  • 2 slices whole grain or sourdough bread
  • 1 tbsp cream cheese or cashew spread
  • 2 slices fresh tomato
  • 2 soft-boiled eggs
  • 1 cup fresh spinach
  • 1 tsp olive oil or butter
  • 45g cremini mushrooms, sliced
  • Salt, pepper, chili flakes (optional), fresh parsley for garnish

Instructions

  1. Boil the eggs: In a saucepan, bring water to a boil. Gently lower in the eggs and boil for 7 minutes. Transfer to an ice bath to cool before peeling.
  2. Sauté the veggies: In a frying pan, heat olive oil over medium heat. Add sliced mushrooms and sauté until golden brown. Add spinach and cook until wilted.
  3. Assemble the toasts: Spread cream cheese on one slice of toast and top with tomato slices. On the second slice, layer sautéed mushrooms.
  4. Plate & finish: Arrange the toast, soft-boiled eggs, and sautéed spinach on a plate. Season with salt, pepper, chili flakes (if using), and garnish with parsley.
