2 slices whole grain or sourdough bread
1 tbsp cream cheese or cashew spread
2 slices fresh tomato
2 soft-boiled eggs
1 cup fresh spinach
1 tsp olive oil or butter
45g cremini mushrooms, sliced
Salt, pepper, chili flakes (optional), fresh parsley for garnish
Instructions
Boil the eggs: In a saucepan, bring water to a boil. Gently lower in the eggs and boil for 7 minutes. Transfer to an ice bath to cool before peeling.
Sauté the veggies: In a frying pan, heat olive oil over medium heat. Add sliced mushrooms and sauté until golden brown. Add spinach and cook until wilted.
Assemble the toasts: Spread cream cheese on one slice of toast and top with tomato slices. On the second slice, layer sautéed mushrooms.
Plate & finish: Arrange the toast, soft-boiled eggs, and sautéed spinach on a plate. Season with salt, pepper, chili flakes (if using), and garnish with parsley.
