  • 1/4 cup Thai red curry paste
  • 2 tbsp chicken bone broth concentrate
  • 1/2 cup boiling water
  • 1 can (13.5 fl oz) coconut milk
  • 1 tsp fish sauce or soy sauce
  • Juice of 1 lime or apple cider vinegar
  • 5 pieces chicken thighs, fat trimmed
  • Chopped spring onions for garnish
  • Chopped coriander for garnish
  • 2 tsp chili oil (optional)
  • 1.5 cups jasmine rice

Instructions

  1. In a large pot over medium heat, melt the coconut oil and sauté the ginger and garlic until fragrant.
  2. Stir in the Thai red curry paste for about 2 minutes to release flavors.
  3. Add the chicken bone broth concentrate with boiling water, mixing until blended.
  4. Gradually stir in the coconut milk and bring to a gentle simmer.
  5. Submerge the trimmed chicken thighs into the broth and cook uncovered for about 15 minutes until done.
  6. Rinse jasmine rice under cold water, then cook according to package instructions separately.
  7. Remove cooked chicken from broth, shred into pieces, then return to pot along with fish sauce, lime juice, and chili oil.
  8. Serve warm by spooning rice into bowls and ladling over the broth mixture; top with spring onions and coriander.
