  • 1 cup cooked white rice (jasmine or basmati)
  • 1 lb ground beef (or ground turkey/chicken)
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp sesame oil or olive oil
  • Salt & pepper to taste
  • 1 cup broccoli florets
  • 1 cup zucchini, chopped
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, chopped
  • 1 cup sliced mushrooms
  • 1 tbsp soy sauce
  • 1 tsp olive oil
  • 1 tsp minced garlic

Instructions

  1. Cook rice according to package instructions and keep warm.
  2. In a skillet over medium heat, add sesame oil and brown the ground beef. Season with soy sauce, garlic powder, salt, and pepper until well combined.
  3. In another pan, heat olive oil and sauté minced garlic with chopped vegetables for 5-7 minutes until tender-crisp. Toss with soy sauce.
  4. Assemble by layering rice, ground beef mixture, and stir-fried veggies in a bowl.
