  • 1 1/2 pounds boneless skinless chicken breasts
  • 3 bell peppers (green, yellow, red)
  • 1 yellow onion
  • 2 cloves garlic
  • 1 Tablespoon chili powder
  • 1 1/2 teaspoons paprika
  • 1 1/2 teaspoons cumin
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and freshly ground black pepper
  • 3 Tablespoons vegetable oil
  • Juice from 1 lime
  • 1/4 cup fresh cilantro, chopped
  • 810 small flour tortillas

Instructions

  1. Preheat your oven to 425°F (220°C) and lightly grease a large baking sheet.
  2. Slice the chicken and vegetables into strips and arrange the veggies on the baking sheet. Place chicken on top.
  3. In a mixing bowl, combine all seasoning ingredients and sprinkle over the chicken and veggies. Add minced garlic and drizzle with oil; toss to coat.
  4. Roast in the preheated oven for 15-20 minutes until the chicken reaches an internal temperature of 165°F (75°C). Warm tortillas in foil during the last five minutes.
  5. Squeeze lime juice over cooked fajitas, sprinkle with cilantro, and serve immediately in warm tortillas with your choice of toppings.
