  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat. Sear beef cubes until browned on all sides; remove and set aside.
