  • 2 lbs beef chuck (cut into cubes)
  • 1 large onion (diced)
  • 4 garlic cloves (minced)
  • 1 tbsp ginger (grated)
  • 1 tbsp curry powder
  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup beef broth
  • Salt and pepper to taste
  • Oil for browning

Instructions

  1. Prepare all ingredients by chopping the onion, mincing the garlic, and grating the ginger.
  2. In a large skillet over medium-high heat, heat oil and brown beef cubes in batches for about 5-7 minutes. Remove from heat.
  3. In the same skillet, sauté onions, garlic, and ginger until onions are translucent (3-4 minutes). Add spices and cook briefly until fragrant.
  4. Transfer browned beef and sautéed aromatics to a slow cooker. Stir in coconut milk, diced tomatoes, beef broth, salt, and pepper.
  5. Cover and slow cook on low for 6-8 hours or high for 4-5 hours until beef is tender.
  6. Serve with warm garlic naan or rice.
