  • 100g unsalted butter, at room temperature
  • 850g – about four medium apples, peeled, cored, and diced small
  • 30g unsalted butter
  • 80g granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 1 Tbsp corn starch
  • 125g pecan halves
  • 190g unsalted butter, at room temperature
  • 280g brown sugar
  • 2 Tbsp plus 1 tsp ground cinnamon
  • 1/8 tsp kosher salt
  • 115g unsalted butter, at room temperature
  • 225g cream cheese, at room temperature
  • 250g powdered sugar, sifted
  • 12 Tbsp heavy whipping cream
  • 1/2 tsp kosher salt

Instructions

  1. In a mixing bowl, combine lukewarm milk, granulated sugar, and active dried yeast. Let it sit for about 5 minutes until frothy.
  2. Add eggs and kosher salt to the mixture; stir to combine.
  3. Gradually add all-purpose flour and unsalted butter. Mix until a soft dough forms; then knead until smooth.
  4. Place the dough in a greased bowl, cover it with plastic wrap or a damp cloth. Let it rise in a warm place until doubled in size (about 1 hour).
  5. In a skillet over medium heat, melt unsalted butter.
  6. Add diced apples, granulated sugar, ground cinnamon, kosher salt, and corn starch; cook until apples soften (about 5-7 minutes). Set aside to cool.
  7. On a floured surface, roll out the dough into a large rectangle about ½ inch thick.
  8. Spread softened butter over the rolled-out dough.
  9. Sprinkle brown sugar mixture evenly across.
  10. Top with cooked apple filling and pecan halves.
  11. Roll tightly from one long side to another; slice into individual rolls.
