  • 4.5 grams active yeast
  • 3 eggs (room temperature)
  • 1 tablespoon apple cider vinegar
  • 1 1/4 cups water (warm)
  • 1/4 cup light olive oil
  • 260 grams rice flour
  • 80 grams tapioca starch
  • 60 grams sorghum flour
  • 4.5 grams xanthan gum
  • 2 grams salt

Instructions

  1. Proof the yeast by combining warm water and honey in a bowl. Stir until dissolved, then add yeast and let sit for about 10 minutes until frothy.
  2. In a separate bowl, whisk together rice flour, tapioca starch, sorghum flour, xanthan gum, and salt.
  3. Mix the proofed yeast mixture with the dry ingredients along with eggs, apple cider vinegar, olive oil, and warm water until fully combined.
  4. Beat the mixture for 1-2 minutes until smooth.
  5. Pour into a parchment-lined loaf pan and let rise in a warm place for about one hour.
  6. Preheat the oven to 350°F (180°C) while the dough rises.
  7. Bake for 45-60 minutes until golden brown and the internal temperature reaches at least 200°F (93°C).
  8. Allow to cool before slicing.
