  • 8 ounces ramen noodles
  • 1/3 cup chopped green onion (white/light green part)
  • 1 tablespoon fresh grated ginger
  • 1 tablespoon minced garlic
  • 1 tablespoon oil
  • 1/4 cup low sodium soy sauce or tamari
  • 2 tablespoons chili garlic sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 tablespoon honey, maple syrup, or brown sugar
  • 1 tablespoon rice vinegar
  • 2 teaspoons toasted sesame oil
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Cook the ramen noodles according to package instructions in a pot of boiling water until tender. Drain and set aside.
  2. In a small saucepan over medium heat, sauté the chopped green onion, ginger, garlic, and oil for about 3–5 minutes until fragrant.
  3. Add the remaining sauce ingredients to the saucepan and whisk well. Simmer over low heat for about 5 minutes.
  4. Combine the cooked noodles with the sauce in the saucepan and let simmer for a few minutes to meld flavors.
  5. Serve hot, garnished with fresh green onion, cilantro, and additional red pepper flakes if desired.
