  • 1 lb ground beef (80/20)
  • 2 cups fresh spinach (sautéed and chopped)
  • 8 oz low-moisture mozzarella (cubed)
  • 3 cloves garlic (minced)
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, salt, black pepper, olive oil

Instructions

  1. In a skillet over medium heat, sauté minced garlic in olive oil until fragrant. Add spinach and cook until wilted. Cool slightly, then chop finely.
  2. In a large bowl, mix ground beef, breadcrumbs, Parmesan cheese, parsley, salt, pepper, egg, and the prepared spinach until just combined.
  3. Take a portion of the mixture and flatten it into a disc. Place a cube of mozzarella in the center and form a ball around it. Repeat with remaining mixture.
  4. Heat olive oil in a skillet over medium heat and sear meatballs for 2–3 minutes on each side until golden brown.
  5. Finish cooking by covering the skillet on low heat for 5–7 minutes or bake at 375°F (190°C) for 10–12 minutes.
