  • 1 tablespoon agave nectar
  • 1/4 cup rice apple vinegar
  • 1 tablespoon sesame oil
  • 11/2 cups shredded cabbage (green or purple)
  • 1 small cucumber, julienned
  • 2 small carrots, julienned
  • 1 medium sweet pepper, julienned
  • Fresh cilantro and mint (for garnish)

Instructions

  1. In a mixing bowl, whisk together ginger, garlic, soy sauce, agave nectar, rice apple vinegar, sesame oil, salt, and pepper to create the dressing.
  2. Boil water in a pot and cook the rice noodles according to package instructions until tender. Drain and rinse under cold water.
  3. In a large bowl, combine cooked rice noodles with shredded cabbage, cucumber, carrots, sweet pepper, cilantro, and mint.
  4. Pour the dressing over the salad mixture and toss gently until everything is well-coated. Serve immediately or chill for up to 2 hours before serving.
