  • 200g steak (sirloin or ribeye)
  • Salt & pepper
  • 1 tbsp olive oil (for steak)
  • 2 medium potatoes (cut into wedges)
  • 1 tbsp olive oil (for potatoes)
  • 1 tsp dried herbs (rosemary or thyme)
  • 3 large eggs
  • 2 tbsp milk
  • 1 cup shredded cheddar cheese
  • Avocado slices (for serving)
  • 1 tbsp cream cheese (for topping)

Instructions

  1. Preheat the oven to 200C (400F). Toss potato wedges with olive oil, herbs, salt, and pepper. Roast on an oven tray for 25-30 minutes until golden.
  2. Season steak with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook steak for about 3-5 minutes per side until desired doneness. Let rest before slicing.
  3. Whisk eggs with milk, salt, and pepper. Cook gently in a skillet over medium-low heat, stirring until softly set. Add cheese and stir until melted.
  4. Assemble by placing sliced steak on one side of the plate with cheesy scrambled eggs and roasted potatoes alongside. Top potatoes with avocado slices and cream cheese.
