  • 200g all-purpose flour
  • 1 1/2 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 100g light brown sugar
  • 100g unsalted butter, melted
  • 150ml milk
  • 1 large egg
  • 100g dark treacle or molasses
  • 2 ripe pears, peeled, cored, and diced
  • For the glaze: 100g golden syrup, 50g unsalted butter, 50g light brown sugar

Instructions

  1. Preheat your oven to 170°C (340°F) and grease your cake tin with parchment paper.
  2. In a bowl, sift together flour, ground ginger, ground cinnamon, baking soda, and salt. Set aside.
  3. In another bowl, whisk melted unsalted butter with light brown sugar until smooth. Add milk, egg, and dark treacle; whisk until combined.
  4. Gradually mix dry ingredients into the wet mixture until just combined.
  5. Gently fold in diced pears.
  6. Pour batter into prepared tin and smooth the top. Bake for 35–40 minutes or until a skewer comes out clean.
  7. While baking, prepare the glaze by melting golden syrup, unsalted butter, and light brown sugar in a saucepan over medium-low heat.
  8. Once baked, poke holes in the warm cake and pour the glaze over it to soak in.
