  • ½ cup butter (for caramel sauce)
  • 1 cup brown sugar (for caramel sauce)
  • ½ cup cream (for caramel sauce)
  • 1 teaspoon kosher salt (for caramel sauce)
  • Whipped cream (to serve)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly butter an oven-safe dish.
  2. Soak chopped dates in scalded milk mixed with baking soda for 15 minutes.
  3. Mix dry ingredients in one bowl; blend eggs, brown sugar, butter, and vanilla in another.
  4. Combine both mixtures and add the soaked dates into a smooth batter.
  5. Pour into the prepared dish and bake for about 30 minutes until set.
  6. Prepare Salty Caramel Sauce by melting butter, mixing in sugar and salt until dissolved; stir in cream until thickened.
  7. Poke holes in the baked pudding and soak it with some caramel sauce for added flavor before serving.
