  • 2 medium butternut squash
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 2 cups cooked chicken, shredded
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • Optional: Dried cranberries or raisins, chopped walnuts or pecans

Instructions

  1. Preheat oven to 400°F (200°C). Brush butternut squash halves with olive oil, drizzle with honey, and sprinkle with cinnamon, salt, and pepper.
  2. Place cut-side down on a baking sheet and roast for 30–40 minutes until tender.
  3. In a mixing bowl, combine shredded chicken, onion, garlic, olive oil, herbs, broth, Parmesan, and optional ingredients.
  4. After roasting the squash, scoop out some flesh and mix it into the filling.
  5. Spoon the filling back into each squash half and return to the oven for an additional 15 minutes until golden.
