  • 1 cup uncooked white rice
  • 2 cups water or chicken broth
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans (15 oz)
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • Optional: salsa, fresh cilantro, lime wedges

Instructions

  1. Cook the rice by boiling water or chicken broth in a large pot. Add rice, reduce heat to low, cover, and simmer for about 18–20 minutes until cooked.
  2. In a skillet over medium heat, heat olive oil and add ground meat. Cook until browned.
  3. Stir in taco seasoning and a splash of water if necessary; simmer for 5 minutes.
  4. Assemble bowls by layering cooked rice topped with seasoned meat, black beans, corn, diced tomatoes, lettuce, cheese, and salsa.
  5. Garnish with optional cilantro and lime wedges before serving.
