  • 1 1/2 pounds ground turkey

  • Olive oil or avocado oil, for brushing and frying
  • 2 tablespoons ghee or unsalted butter
  • 1 tablespoon olive oil
  • 1/2 cup finely minced onion
  • 6 cloves garlic, pressed
  • 2 teaspoons Italian seasoning
  • 1 (15 ounce) can plus 1 cup organic pumpkin puree
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 3/4 cups chicken stock
  • 1/2 cup grated parmesan cheese
  • 1/4 cup heavy cream
  • 2 tablespoons maple syrup
  • 1 tablespoon chopped fresh sage

Instructions

  1. Combine breadcrumbs and milk in a bowl; let sit for 2-3 minutes.
  2. Mix in onion, garlic, sage, parsley, Italian seasoning, parmesan, egg, salt, and pepper.
  3. Add ground turkey and gently combine without overmixing.
  4. Chill the mixture for 20-25 minutes before shaping into meatballs.
  5. Sear meatballs in a hot skillet until browned on all sides.
  6. In the same skillet, sauté onions and garlic; add pumpkin puree and chicken stock to make sauce.
  7. Simmer and whisk in cream, maple syrup, and parmesan before adding meatballs back to sauce.
