  • 8 oz sliced mushrooms
  • 2 tsp olive oil
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Italian blend cheese
  • 4 eggs, beaten
  • 1/2 cup heavy cream
  • 2 oz sliced turkey pepperoni
  • 1 can sliced black olives (drained, optional)
  • Italian herb seasoning

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a glass pie dish with non-stick spray.
  2. In a non-stick frying pan, heat olive oil over medium-high heat and sauté the sliced mushrooms until lightly browned.
  3. In a mixing bowl, combine mozzarella cheese, Italian blend cheese, and Italian herb seasoning.
  4. In another bowl, beat the eggs and mix in heavy cream.
  5. Combine egg mixture with the cheese mix in the pie dish.
  6. Layer cooked mushrooms on top of the mixture followed by turkey pepperoni slices and olives if desired.
