  • 1 1/2 cups almond flour
  • 1/4 cup oat flour
  • 1/3 cup melted refined coconut oil
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup berries, fresh or frozen
  • 1 1/2 tbsp pure maple syrup
  • 1 tbsp water
  • 1/2 tsp cornstarch
  • 1/2 cup oat flour
  • 1/4 cup oats
  • 2 tbsp almond flour
  • 1/4 cup melted refined coconut oil
  • 1 tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, oat flour, salt, melted coconut oil, and maple syrup until fully mixed. Press into a greased 8×8 baking dish.
  3. In a pot over medium heat, combine berries, maple syrup, and water. Mash gently as they soften. Stir in cornstarch and simmer for about 5-10 minutes to thicken. Cool in the fridge.
  4. For the crumble topping, mix oats, oat flour, almond flour, melted coconut oil, maple syrup, and vanilla extract until crumbly.
  5. Spread the berry mixture over the base layer in the baking dish and top with crumble mixture. Bake for approximately 25 minutes until golden.
  6. Allow cooling completely before cutting into squares.
