  • 2 tablespoons oil (or water for oil-free)
  • 1 large onion (diced)
  • 3 large carrots (cut into chunky pieces)
  • 2 ribs celery (diced)
  • 5 cloves garlic (minced)
  • 1 medium rutabaga (cut into chunky pieces)
  • 4 large potatoes (cut into chunks)
  • ¼ head green cabbage (shredded)
  • 4 cups vegetable stock
  • ¼ cup soy sauce
  • Optional: 9 oz vegan beef or mushrooms
  • Herbs: thyme and rosemary

Instructions

  1. In a large Dutch oven, heat oil over high heat. Sear vegan beef or mushrooms until golden; set aside.
  2. Lower heat to medium, add onion, carrots, and celery. Sauté until they begin to soften, then add garlic.
  3. Stir in flour; cook for 1–2 minutes to remove raw taste.
  4. Gradually pour in vegetable stock, stirring constantly. Add rutabaga, potatoes, cabbage, soy sauce, salt, pepper, sugar, bay leaves, thyme, and rosemary. Mix well.
  5. Bring to a boil, then reduce to medium-low heat and simmer uncovered for about 45–50 minutes until vegetables are tender.
  6. Stir in seared vegan beef or mushrooms before serving.
