Vegan Serbian White Bean Soup (Pasulj) is a comforting and flavorful dish that warms the soul with every spoonful.   • 4 onions, finely diced
  • 3 cloves garlic
  • 2 leeks
  • 2 carrots
  • 3 slices celery root (celeriac)
  • 2 cans white beans
  • 2 cans diced tomatoes
  • 8 cups vegetable stock
  • 200 g freekeh (or TVP)
  • 2 Tbsp tomato paste
  • 2 tsp marjoram
  • 2 tsp oregano
  • 2 bunch parsley, chopped
  • 1 tsp celery salt
  • 2 tsp onion powder
  • 4 tsp paprika powder, sweet
  • 1 tsp smoked salt (optional)

Instructions

  1. Ground the freekeh in a high-speed blender until finely cracked; soak in vegetable broth overnight.
  2. Sauté diced onions and minced garlic in a large pot over medium heat until fragrant.
  3. Add chopped leeks, carrots, and celery root to the pot; sauté briefly until softened.
  4. Stir in remaining ingredients including soaked freekeh; simmer for about 20 minutes until freekeh is tender.
  5. Adjust seasonings as necessary and garnish with freshly chopped parsley before serving.
