  • 2 ½ pounds of stew meat (beef)
  • 4 cups beef stock
  • 5 medium carrots, chopped
  • 1 pound baby Yukon Gold potatoes, halved
  • 2 cups chopped yellow onions
  • 4 minced garlic cloves
  • Olive oil
  • Apple vinegar
  • Tomato concentrate

Instructions

  1. Season stew meat with black pepper, garlic salt, and celery salt; coat with flour.
  2. Optional: Sear seasoned meat in olive oil until browned.
  3. Transfer meat to the crockpot; add onions, garlic, apple vinegar, beef stock, bouillon cubes, tomato concentrate, carrots, potatoes, bay leaves, rosemary sprig, and frozen peas.
  4. Cover and cook on low for 7 hours or high for 3.5 hours until meat is tender.
  5. For a thicker stew (optional), mix cold water with cornstarch and stir into the stew during the last hour of cooking.
  6. Remove bay leaves and rosemary before serving.
